The main night market in Kanchanaburi operates every evening near the railway station, which tells you immediately who it serves—locals commuting home stopping for dinner.
This isn't tourist-oriented. The stall operators speak Thai, the food is priced for residents, and nobody's trying to sell you elephant pants between bites. Grilled meats, seafood, mango sticky rice, glass noodles, and dozens of dishes you won't recognize line both sides. The left side is primarily food stalls, the middle varies—some days its clothes and accessories, Wednesdays feature second-hand goods.

Wednesday is the wildcard night—second-hand goods stalls replace some food vendors, creating a completely different market. For maximum food variety, go Friday or Saturday. The mango sticky rice vendors near the back have been there longest—their sticky rice is freshly steamed, not sitting in warmers."
